I immediately fell in love with the Wusthof Classic Ikon Creme 4166-0/20 bread knife when I saw it first. As soon as I took this blade in my hand I felt its durability and perfect construction. But to tell the truth, it’s not the only reason for my affection. The beautiful cream-colored knife handle reminded me of my great-grandmother’s old cutlery set produced at the beginning of the 20th century. That set had cream-colored, curved, bone handles similar to the handle of the 4166-0/20 knife. When I was small I admired those forks, spoons, and knives. That’s why the design of the Wusthof Classic Ikon bread knife won my heart forever. 

In my humble opinion, this knife belongs to the premier league. I always pay attention to both the design and functionality of my cutting tool, it’s crucial for me what I cut products with. That’s why I consider Wusthof Classic Ikon Creme 4166-0/20 a cutlery masterpiece – it looks gorgeous, sits comfortably in hand, and provides effortless cuts.

The main colors in my kitchen are brown and beige, so the 4506-0/16 model fits my interior perfectly. The knife always catches my guests’ eyes with its luxurious design and shiny blade, especially if they are cooking fans familiar with the Wusthof brand. I think the 4166-0/20 knife will be able to become an essential decor element and compliment any kitchen style. It looks masculine and brutal, but the cream-colored handle adds elegance to the whole tool. Personally, I like to attach this beauty to a magnet holder rather than keep it in a knife block. This way I can enjoy its perfect appearance.

With this model, the cutting process will be ultimately efficient no matter how tough crusts or peels are. 

Despite my huge love for this knife, I must mention its single drawback. If the cutting edge becomes dull, you won’t be able to hone it manually at home no matter what sharpening tool you’ll use (whetstone, honing steel, or manual sharpener). You’ll probably have to go to a company that is capable of providing a sharpening service. Unfortunately, most such companies can’t guarantee that your knife will be as sharp as it was when you purchased it. However, if you take proper care of your blade, you won’t think about sharpening for decades. The 4166-0/20 model features an exceptionally long cutting edge life.  

Bolster

Wusthof Classic Ikon Creme 4166-0/20 bread knife features reduced half-choke geometry at the thickening (bolster) between the handle and blade. The bolster is a part of the full-tang blade and ensures comfort, balance, and safety when working with the knife. Additionally, it makes a barrier for food pieces and crumbs so that they can’t get under the handle pads. This helps to keep the knife hygienic and prolongs its beautiful look for many years. 

Due to the bolster, the cutting process will be much safer since this thickening protects your fingers. Therefore, your palm securely remains on the knife handle and won’t slip on the cutting edge. The slim design of the bolster allows the use of the entire blade. That’s important for me when I need to cut such large products as pumpkin or watermelon. Using the full length of the blade ensures easier and smoother hand movements. Anyway, full or half bolster is the case of personal preferences.      

Handle

The handle is 4.7 inches long, it has a uniquely curved form that fits any palm, big or small, and feels like it gets adapted to your hand once you take the knife. So, the handle provides an ultimately comfortable and reliable grip. Such a grip is especially important when cutting large, solid fruits and vegetables. Actually, when cutting, I feel the knife as if it were the continuation of my hand, so I can work with it for several hours in a row! The handle itself is made of polyoxymethylene, it’s a high-quality, slip- and shock-resistant plastic that ensures the handle’s nice appearance for many coming years.

The handle pads are securely fastened with three steel rivets. However, you won’t feel them under your fingers, the surface is flat, smooth, and very pleasant by touch. There is a counterweight at the end of the handle. Together with bolster, this counterweight makes the knife well-balanced, therefore, convenient. 

Price

I think my review wouldn’t be complete without mentioning the knife’s price. Wusthof Classic Ikon Creme 4166-0/20 bread knife price is about $150, excluding delivery costs. Of course, that’s a high price, however, we pay for premium-class products made by famous and trusted brands. It’s the best Wusthof bread knife in terms of design. Classic Ikon Creme series is more expensive than the Classic Ikon series that comes in black color. So, if the design doesn’t play a crucial role for you, pick a knife from the Classic Ikon series; it’ll have the same characteristics, but the handle will be black.

The factory is located in Solingen, Germany, and is currently run by Harald and Viola Wusthof, the 7th generation of the Wusthof family. This brand takes pride in its tireless pursuit of craftsmanship and products’ premium quality. Wusthof has been the worldwide leader in knife sales for the past fifty years.

This Wusthof Gourmet 4145 bread knife review is based on my own experience. I bought this model 5 weeks ago and from then have been testing it daily in my home kitchen. My review must help you to determine whether you need this knife.

Design

Wusthof has lots of knife series, and most of them feature decent design. However, don’t expect the Gourmet series to be elegant! These knives won’t become a beautiful addition to your kitchen. But, please, don’t get me wrong! The Gourmet knives don’t look ugly at all! But when you see them at first, you may think they are cheaply-built, poor quality instruments. The same goes for the 4151 model, its appearance is quite mediocre. But if you get sight of the logo engraved on the knife’s blade, you’ll realize that it was developed by a reliable brand. I never saw any other affordable bread knife with such a luxurious engraving. At the best, cheap cutting tools just have a company logo and steel grade engraved on their blades. 

So, the Wusthof traditional engraving will let you know that you are actually holding more than just an ordinary kitchen knife. The Gourmet series accumulates famous German cutlery traditions, reliability, and authentic ergonomics for an affordable price. The design of the 4151 model is plain and it definitely won’t make your heart beat faster when you take it in your hand. However, I do think that the beauty of this knife is in its practicality and functionality. 

I always draw an analogy with a hammer. Like a hammer, Wusthof Gourmet 4145 works exactly in the way it has to. It doesn’t try to look beautiful or luxurious. It even doesn’t have any color options – this knife only comes in black. However, the same as the best, tried-and-true friend, it’ll never let you down. Besides, in my humble opinion, a knife with a simple black-colored handle will never worsen your kitchen style, whether you place it in the knife block or attach it to the magnet holder.

Be attentive when shopping for a knife. Some cutting tools may impress you with their shiny handles, thick & heavy blades, and overall nice design. However, a beautiful appearance doesn’t necessarily mean good quality. Modest Gourmet knives can be shadowed with other knives’ pomposity. Remember that it’s just marketing tricks, so don’t let them fake you out! 

Blade

Wusthof Gourmet 4145 features a 9-inch (23 cm) long, serrated blade. As for me, this model is indispensable in the home kitchen. I’d even say that it’s more useful than 8-inch models. An 8-inch tool may be more suitable for cutting bread and other baked foods. However, a serrated blade provides more capabilities than simply cutting neat bread pieces for sandwiches. I adore cooking and eating various meals made of pumpkin (porridges, pies, casseroles, etc.), 9-inch Gourmet waved blade is just one of the best Wusthof bread knives for cutting a pumpkin into pieces. An 8-inch knife might feel too short for big fruits and vegetables, while a 10-inch blade feels huge, like a saw in a hand. So, 9 inches are ideal for cutting such products as watermelon, melon, pineapple, pumpkin, etc. 

I think that a bread knife is as important for the home kitchen as a cook’s knife. Although a cook’s knife, be it Santoku or French, can replace utility or carving tools, it’ll never replace a waved blade. In fact, it’s dangerous to use a chef’s knife for cutting solid, large vegetables, like a pumpkin, since this knife can slip off and seriously injure your hand. For this reason, a serrated blade is a must-have for the home knife set.  

The Wusthof Gourmet 4145 blade is manufactured from chrome molybdenum vanadium steel (X50CrMoV15), making it reliable, stain- and rust-resistant. The blade is hardened to 56 HRC and, of course, it can hardly impress cooking enthusiasts with its durability. However, let’s remember that this knife is meant for home use, so 56th hardness is completely enough. Also, this value allows straightforward sharpening, but I can’t even imagine the way you manually sharpen your serrated blade at home.   

Handle

The 4151 model has an ergonomic 4.5-inch (11.4 cm) long handle made of polyoxymethylene (POM). POM is a high-quality plastic which is resistant to high temperatures, its melting temperature is 356 °F (180 °C). It means that if you accidentally leave your knife in the oven, chances are it’ll survive. This is impossible with polypropylene handles. The Wusthof Gourmet 4145 handle can withstand shock loads, e.g., drops from the kitchen table, plus, it’s resistant to oils and organic solvents. All these factors ensure that the handle will keep its nice appearance for a longer period. On top of that, POM provides a reliable grip, it won’t slip off even in a wet hand. I tested this feature myself, and it really works!

The handle features a classical European design and is suitable for any palm size. It’s flat on the top but curved on the bottom and has a hand stop at the end, making it quite convenient to manipulate the knife for a long time. Although the grip is not that super comfortable compared to professional cook’s knives, it’s totally fine for home use. This model weighs 0.3 lbs (140 g). Does it seem too lightweight to handle tough tasks for you? Believe me, it’s all right! The knife felt well-balanced and very convenient when I was dicing a 12-inch pumpkin. I was happy with its weight.

The handle is attached to the full-tang blade with three metal rivets. Those rivets are unfelt and unnoticed under your fingers; the surface is flat, smooth, and very pleasant by touch. The handle itself is sturdy and reliable with no backlashes or cracks. As I touched on above, Wusthof doesn’t offer any color options for Gourmet knives, handles are black. Nevertheless, black is a universal color that is always a safe bet for any kitchen interior.  

Price

My Wusthof Gourmet 4145 knife review wouldn’t be complete without mentioning the price. This knife costs about $70, excluding delivery costs. Although this price may seem a bit high for a stamped blade with a mediocre design, personally, I consider it quite fair. Firstly, this cutting tool is produced by a trusted and reputable German brand. Secondly, it’s made of high-quality materials, hence, it’ll last longer. Thirdly, the knife is sharp and provides accurate cuts. Finally, it’s multi-purpose, convenient, and safe. I think those are important characteristics for a home-use knife. Besides, it’s lightweight enough to ensure comfortable use in less experienced cooks like kids or the elderly. I don’t regret buying a Wusthof Gourmet 4145 bread knife for my kitchen. It’s worth every penny I’ve spent on it!

Personally, I do like the Classic Icon series since it looks great but is more affordable than the glamorous Ikon Creme or Ikon with wooden handle. I cut a medium-sized pumpkin having my hands wet, and concluded that this material is perfectly suitable for such tough tasks. Polyoxymethylene handle is shock-resistant and more practical than wooden, metallic or polypropylene one. The knife will keep its attractive appearance even after many years of use.  

The handle pads are securely fastened with three steel rivets; however, the surface is flat and smooth. There are no dips or protrusions on the pads, so it not only feels great but also looks gorgeous. The handle provides a convenient grip due to the asymmetrical, curved form along with the horizontal cut. So whether your palm is big or small, you’ll feel very comfortable while cutting. I use this knife in my professional kitchen and can cut for several hours in raw without overworking my hand.

Furthermore, there is a double bolster for perfect knife balance. Although the cutting tool itself is quite heavy – 0.34 lbs (154 g) – it feels light and well-balanced. The blade is easy to manipulate and requires no extra pressure when you cut large, hard products.
